Twice Baked Butternut Squash



Vegetarian dish. A mixture of a sweet and sour taste. Sorry, no photo. I was too busy eating.


1 medium butternut squash

3/4 cup of plain greek yogurt

3/4 cup of Parmesan cheese

Salt and pepper


Steps:


1. Cut and clean Squash, 

2. Drizzle with oil, salt, put in the oven, bake in preheated oven on 425 until fork tender (between 30 and 40 minutes)

3. let it cool down so that you can handle it, scoop out meat leaving 1/4 inch border, leaving the shell intact, 

4. mix with yogurt, 1/2 cup of cheese, season 

5. fill shells and sprinkle with the remainder of cheese.

6. return to oven for 10 more minutes or till top goes golden brown.
