Lemon-Basil Chicken

The photo is before I served it. I ate mine with millet, my husband ate his with rice. He refuses to eat bird seeds. 


1 medium onion

4 cloves of garlic

1.5 pounds of chicken breasts

5 cups of baby spinach

2 cups of basil leafs

2 tbs lemon juice

Oil

Soy sauce

Black pepper, lemon zest



1. Sauté onions and garlic

2. Add chicken and brown on all sides, stir in soy sauce and black pepper, cook till chicken is cooked

3. Stir in spinach, few handfuls at a time, add lemon zest, juice, and basil, cook till basil is wilted, season per taste


Serve with rice.
